It is a trait in my household that we never have beans straight from a can and once you try this recipe, you will see why.
You will need coriander, a red onion, a can of beans, any brand of olive oil, paprika, mixed herbs and some garlic butter. This isn't strictly vegan but I don't react to the garlic butter so I use it but you can use any butter you want.
Start by chopping the red onion, I only used half because I didn't want too much this time but it is up to you. You can also use white onions or even a spring onion.
Then melt a knob of the garlic butter in a pan
Then season the oil with a sprinkling of paprika and mixed herbs, you can also use oregano or any herb you like.
Once you feel like the oil has warmed slightly with the spices/herbs then add the onions and wait for them to brown.
Whilst you are waiting for it to brown, chop a little of the coriander, maybe around 4 or 5 stems.
Once the onions have browned, add a little of the sauce from the beans can and let that heat with the onions and oil. Once it is sizzling, throw the whole lot in.
Then add the coriander and stir
Now just let it cook a little, until it looks like this, if you are waiting for anything else to cook then shove the beans in the oven to stay warm.
Voila, your beans are served!
Hope you enjoyed my first recipe and please let me know if you try it out.
